Traditional South African Recipe - Potjiekos

Stews and soups are great for warming you up. While the spring and summer days might be warm and balmy, the evenings can be a bit chilly. There are lots of delicious ideas for stews to choose from, including curried lamb, traditional beef, classic pumpkin soup and much more. Recipes like this are also nice if you have a cold or sore throat and you want something comforting. Make extra, if you like, because recipes like this tend to freeze well.

What I consider reasonable, in my case, is either Lemon Chicken or Controversial lamb casserole from the Brass Sisters. I am leaning towards the slow cooker lamb stew with beans but the chicken recipe is certainly appealing. If you don't want to host a crowd, it would make a perfect family dinner.

The best thing about a slow cooked lamb casserole cooker, of course, is that it frees you to do other things while the food is cooking. You can place all of the ingredients into your crock pot or other slow cooker, and your food will be ready and waiting when you arrive home.

The other thing is to note that herbs sometime loose their intensity in the long cooking process. So an hour before serving, sneak a taste - it's ok, I do it all the time.

News cycles only last a few days as the fickle press folks go off searching for more tasty tidbits, even if irrelevant, to fill TV time and the pages of newspapers. The Sarah phenomenon has faded as fast as the lipstick on that pig and the McCain campaign could see it was time to get back on the front pages again. Ms Kitty, although an 'Independent' in Congress, was a good choice if they could involve her.

When you do not have fresh herbs, having dried Oregano, Parsley or Dill on hand will enhance the flavour of many meals. Dried herbs should be replaced every 5 to 6 months to ensure that they are still potent. In spring and summer, aromatic bouquets of Basil, Dill, Rosemary, Thyme, and Oregano seem to be ever where. Growing your own herbs indoors is very rewarding. Parsley enriches any soup stock or lamb stew. It relieves bad breath when it is chewed after a garlicky meal. Mint will balance a spicy meal. Have fresh cilantro in home made salsa or as a salad green. Cilantro in a sauce with shallots, ginger and chilies goes great on salmon.

And as with most slow-cooker recipes, just toss everything in the pot in the morning and come home 8-12 hours later to a delicious, bubbling hot, comfort-food meal. I was so glad I did this last Friday; coming home after 10 hours of work (and 2 hours of commuting), my spirits lifted as I inhaled the delcious smell of onions and beef when I walked in the door.

After the lamb stew for toddlers, scones and boiled potatoes are washed down with green beer, relaxation and fun is in order. Gather around the TV to watch one of these classic Irish themed flicks.
